Vegan, wheat free, sugar free and raw. Requires a fairly heavy duty blender to make, and ice block molds.

 

Ingredients:

2 large bananas
1 cup frozen blueberries
1 can coconut cream

 

Instructions:
  1. Slice bananas and freeze them overnight.
  2. In the food processor, place frozen bananas (break up the slices so they aren’t all stuck together), can of coconut cream and cup of frozen blueberries.
  3. Blend the crap out of it until it is all smooth and the blueberries are blended in. It kinda looks like a thick soft serve.
  4. Serve immediately for soft serve version. Put any leftovers in ice block molds and freeze for a healthy snack.

I also recently made a mango version (with sliced fresh mango frozen overnight instead of blueberries) and it was super tasty.
